So I've learnt that you're meant to use the same hand for each sign, normally your dominant hand, so that's what I've been doing, but the person on the videos appears to be switching thei dominant hand? Are they? Do I stick with one hand? Or am I just meant to sign "apple" with my non-dominant hand? I don't get it, and if they're switching, how do I know which hand I should be using when it's a two hand sign? Also, did anyone else get the question where the answer was "soup" but they spelt "siup" or something?

yes, youre meant to avoid switching. when a sign is single-handed, you use your dominant. for something using both hands, usually ive found that movements are done with your dominant. say youre right-handed and are signing "slow" your non-dominant is the static arm, and your dominant is the one drawing up your forearm. another example could be "tree", where your non dominant is static and your dominant does the twist-y motion.
